This is one of the favorites in our home, its so delicious and easy to make.
1/2 cup butter, softened
1 cup granulated sugar
2 eggs, beaten
4 bananas, finely crushed
1 ½ cups gluten free flour
1/4 teaspoon gluten free Xanthan Gum
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
1/2 cup chopped pecans or walnuts.
1/2 cup dark chocolate chipits
Preheat oven to 350º / 180º
Cream together butter and sugar. Add eggs and crushed bananas. Combine well.
Sift together flour, soda and salt. Add to creamed mixture. Add vanilla, pecans and chocolate chipits. Mix just until combined. Do not overmix.
Pour into greased and floured loaf pan. Bake 55 minutes.
