Cinnamon Cookies
This cookies are easy to make and goes really nice with a cup of tea or coffee. This cookies also freeze well, so you can double or triple the recipe.
Ingredients
2 1/2 cups of gluten free 1-1 flour
2 tsp cream of tartar
1 tsp baking soda
1 tsp. kosher salt
1 cup butter, softened (2 sticks)
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
For rolling dough
1/4 c. granulated sugar
1 tbsp. ground cinnamon
¼ cup dark chocolate chips
Preheat the oven to 350°. Line 2 large baking sheets with parchment paper.
In a bowl, whisk together flour, cream of tartar, baking soda, and salt.
In the mixer bowl, beat butter with granulated sugar, brown sugar until light and fluffy, about 3 minutes.
Add the eggs, one at a time and beat to combine. Add the dry ingredients mix until combined.
In a plate or bowl, combine ¼ cup of sugar with the cinnamon.
Form about 1 1/2"-inch balls of dough, then roll the balls in cinnamon sugar. Arrange prepared baking sheets.
Bake for about 12 minutes. Let them cool on the tray for about 5 minutes, then transfer cookies to a wire rack to cool.
