Portuguese Farturas (Churros) - Gluten Free

So this afternoon I was feeling like having something sweet but not to sweet. This is just the perfect little treat and goes great with Tea or coffee. I remember my grandmother making this for us all the time.


Ingredients:

· 1 cup water

· 1/4 cup butter (I used lactose free butter)

· 1 Tbsp granulated sugar

· 1/4 tsp salt

· 1 cup gluten free flour

· 1/4 tsp Xanthan gum

· 1 large egg

· 1/2 tsp vanilla extract

· Vegetable oil, for frying

For coating:

. 1/2 cup granulated sugar

. 3/4 tsp ground cinnamon


In a small saucepan over medium heat, combine water, sugar, salt. Bring to a boil.


While you are waiting for the water to boil, in another bowl mix flour and Xanthan. In a smaller bowl beat the eggs and the vanilla.


Once water is boiling, remove from heat pour it over the flour stirring it with a wood spoon. You will get a thick paste.

Now add the egg mix and stirring till the eggs are well mixed and you back to have the thick dough. Let it rest for 10 minutes.


Heat the oil in a pot or a deep frying pan. Transfer dough to a 16-inch piping bag fitted with a rounded star tip.

Carefully pipe mixture into preheated oil, into about 6-inch lengths, cut end with clean scissors.


Let fry until golden brown, about 2 minutes per side. Transfer to paper towels to dry for a minute or two then transfer to cinnamon sugar mixture and roll it to coat.

Can be served just like that or with chocolate or caramel to dip.
