Fried rice and Falafel Bowls

This this is simple to make, you can prepare the rice and the dressings ahead of time and then put everything together when you ready. I used Yves Falafel Balls but you can use any Falafels, if they are large Falafel ball then cut them into bit size.

Ingredients

. 1 cup Basmati Rice

· 1 cup chopped spinaches.

· 1/2 cucumber, chopped

· 1 cup cherry tomatoes, sliced in half

· 1 roasted red pepper, chopped

· 4 green onion tops, chopped

· 1cup crumbled feta

· 1/2 cup pitted kalamata olives

· 1/2 cup green olives

· 1/4 cup of balsamic vinegar

· 1/4 cup of garlic infused olive oil

. 1 teaspoon of salt

. ¼ teaspoon of black pepper

. ¼ teaspoon garlic powder

. ¼ teaspoon chili peppers (optional)

. 1 tablespoons stir-fry oil (can use sesame oil instead)

. 6 small Falafel balls cut in half (I used Yves Falafel Balls)


Cook rice as per the package. While the rice cook prepare the other ingredients.

Once the rice is cooked, bring a frypan to eat up with the stir-fry oil. Once oil is hot add the rice, falafels and fry it for about 8 minutes stirring occasional. Once done add it to a large bowl and let it cool about 10 minutes before adding the other ingredients to the bowl.


While you are waiting for the rice to cool make the dressing.

In a glass jar with lid, combine the garlic infused olive oil, balsamic vinegar, salt/pepper, garlic powder and chili peppers, close jar and give it a good shake.

Once rice is cooled a bit add all the other ingredients to the bowl. Pour dressing over everything and toss it until well mixed.
