Quinoa Almond Butter Thai Salad

With the warm weather we been having I thought this would be a good salad. Its a very spring/summer flavor type a salad. I bought the Almond butter at the bulk store in case you can't find it anywhere else. If you not big on Quinoa you can replace it with rice. This is another good recipe for meal prepping as it stays in the fridge good for a few days.

Ingredients

1 cup uncooked quinoa

1 cup broccoli florets finely chopped (If you don't like raw, steam the broccoli for 2 minutes)

1/2 cup shredded carrot

1 cup red bell pepper chopped into bit sizes

1 cup shredded red cabbage

3 green onions chopped

1/4 cup peanuts chopped

Dressing

1 tablespoons toasted sesame oil

1 tablespoon Soy free Soy sauce

1 tablespoon rice vinegar

Juice of 1 lime

3 tablespoons water to thin the dressing


Add quinoa once cooled a bit into a bowl then add all the salad ingredients into a large bowl, adding the broccoli last.

Add the dressing over salad. Toss ingredients together to combine.

If not service immediately store it in fridge.
